Vegan Burritos

Simple, cheap and delicious. Honestly, this is one of my favourite Saturday night recipes and I can never just stick to one (or two) burritos! The whole preparation process only takes about 5 minutes, you can add whatever you want but this is just the way I prefer to have my burritos now 🙂

– wraps
– kidney beans
– cherry tomatoes
– two avocados
– corn
– peas
– salt/pepper
– chili (powder)

Mash your avocados either with a fork or in a blender, add in the tomatoes and mash those up a little as well. 

When it’s all mixed and mashed, you’re ready to cook the beans, corn and peas in a pan until it’s all cooked. Make sure to add the seasoning to taste. Place a single wrap on a plate and heat up in the microwave for about 30 seconds. Place the beans and “guacamole” on the wrap and fold!

Decorate with some nachochips and leftover guacamole and you’re done! Enjoy you meal 🙂

    I've been trying lots of new began recipes in hopes of eventually cutting meat out of my diet completely and this looks like something I'd love and eat again and again. It might also be due to my soft spot for burritos ;-)xoMaria // Fox and Arrow
